Day 80: Tackle an Artichoke

What a weird vegetable the artichoke is – part of the thistle family I believe. It’s not really like any other veg I’ve tried to prepare before so this was an event in itself. Rubbing the cut edges with fresh lemon juice, extracting the choke, slowly simmering in water & oil and finally adding it to a risotto – once again thank you BBC Goodfood!
