Day 87: Jerusalem Artichoke

Apparently this is a tubular rather than an artichoke I’ll have you know. I’m learning something new everyday! Effectively you can use it like a posh potatoe – roast it or mash it and I reckon it tastes a bit like celeriac. Ive never knowingly tried one or cooked one – so another mysterious vegetable’s been ticked off the list.
